  • 2 veal cutlets (about 5–6 oz each, pounded thin)

  • Salt and black pepper

  • 2 Tbsp all-purpose flour

  • 3 Tbsp olive oil, divided

  • 1 cup sliced mushrooms

  • 1 cup sliced baby bell peppers (red, yellow, orange)

  • 1/4 cup dry white wine or chicken broth

  • 2 cups marinara sauce

  • 1 Tbsp tomato paste (optional)

  • 4 oz fresh mozzarella, sliced or torn

  • 8 oz rigatoni or spaghetti

  • Grated Parmesan, to serve

  • Chopped parsley or basil for garnish

Directions

  1. Prep the veal: Pat dry, season with salt and pepper, and dust lightly with flour.

  2. Sear: In a large oven-safe skillet, heat 2 Tbsp olive oil over medium-high. Sear veal 45–60 seconds per side. Remove to a plate.

  3. Sauté: In the same skillet, add remaining oil. Cook mushrooms and peppers 4–5 minutes until lightly browned.

  4. Deglaze: Add wine or broth, scraping up bits. Simmer 1 minute.

  5. Sauce: Stir in marinara and tomato paste. Simmer 8–10 minutes until rich and thick.

  6. Bake: Nestle veal back in, top with mozzarella, and bake at 400°F for 10–12 minutes until golden and bubbling.
